4 boneless, skinless chicken breasts
2 T. e.v.o.o. (extra virgin olive oil)
1 small yellow onion, chopped
2-4 cloves garlic, diced
1 small can diced green chilis
Salt, oregano, cumin and chili powder
2 cups boiling water
Saute' onion and garlic in e.v.o.o. until onion is transparent (be careful not to burn the garlic.) Remove with slotted spoon and set aside. Season chicken with all seasonings and fry in same oil about 5 minutes per side. While chicken is frying, heat water in microwave. Spoon onions, garlic and chilis over chicken. Pour boiling water around chicken; cover and lower heat to simmer gently. Cook 45 minutes to an hour. Remove from heat. Remove chicken and shred. Thicken broth with cornstarch; boil gently for 1 minute; pour over chicken. Spoon into tortilla shells.
Add all your favorite toppings and enjoy.
Don't you think it's about time that we create a Family Cookbook? Well, I DO! I've spent some time researching trying to come up with the easiest (free) way to get it going, and I believe this is it. Please post any of your favorite recipes, also any tips -- cooking, household, beauty, whatever -- and any inspirational thoughts (whether your own, or someone else's.) I would LOVE to have pictures to include as well. You could take pictures of the dishes/recipes you are submitting, or even just great pictures (or even below average pictures) of you and your family!
Please label each post with an appropriate label (i.e., salad, dessert, vegetarian, household tip, inspiration, etc.) Go ahead and add labels as needed; and it's ok to have more than one label per recipe/post.
My plan is to take what we assemble here, and put it into book form. I would love to have it ready for our Thanksgiving Extravaganza!
